So it’s a while since I updated the blog. Which is not the same as doing nothing, although I’ve been doing a lot less with biscuits, aside from making them of course.

When I started this business in 2017, and for the past 5 years, I have been unable to scale the business due to the cost of bagging biscuits. In 2021 I theoretically solved this problem, not just for me, but for the thousands of cookie makers out there who want to sell to shops, but can’t scale their business without huge investment in packaging technology and facilities required to house it.

In early 2022 I was awarded a venture capital fund to make my theoretical design a reality. So now it’s nearly summer time, the design is progressing well and the prototype build will begin shortly.

For biscuits, it’s been busy, but as you may have noticed, there aren’t many iced biscuits on the website, or they only appear for a short time. Icing is very labour intensive, and physically painful when icing hundreds of biscuits per day, followed by bagging them by hand. I’ve been selling lots of shortbread and designing new packaging, but the iced biscuits I have to severely limit production.
